A delicious gluten and dairy free chocolate pudding sure to please your kids. Replace milk with milk of your choice if you have dairy allergies.
1 tsp vanilla extract
1 3/4 cups (435ml) milk of choice (A2 protein, lactose free, rice milk etc)
1/4 cup dutch processed baking cocoa
3 egg yolks
1/3 cup (70g) sugar
1/3 cup (50g) superfine rice flour
Warm milk, cocoa and the vanilla in a saucepan. Whisk yolks and sugar in a bowl until thick.
Whisk in flour, then add milk mixture.
Return to pan and cook, whisking continuously, over low heat until mixture thickens. About 8 minutes.
You can serve immediately for warm pudding or
To Serve Cold: Pour into a bowl, cover the entire surface with plastic wrap. Place in the refrigerator to chill.
