Gluten Free MeatLoaf

A tender and juicy Gluten Free Meatloaf.  This recipe is a family favorite!

Gluten Free MeatLoaf

Meatloaf Ingredients:

1 kg minced beef
1 egg
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 cup ketchup
2 tablespoons mustard
1/4 cup rice flour
1 1/2 teaspoons onion powder
1 1/2 teaspoons garlic powder

Sauce Ingredients:
1 1/2 cups tomato sauce/ketchup (allergy friendly of course 😉 )
1/4 cup mustard
3/4 cup slightly packed brown sugar
1/2 teaspoon balsamic vinegar

To make the meat loaf:

Preheat oven to 180 degrees Celsius/350 degrees Fahrenheit.

This recipe is pretty simple to make. Take the meat and put it into a bowl then add the rest of the ingredients. Mix everything together with your hands, squeezing the mixture through your finger, this ensures that everything is thoroughly mixed. When everything is mixed together it should be easy to handle and to scoop into a loaf pan. If the meat mixture is still sticky add a little more flour at a time.

Spread evenly between the three pans. Top with the sauce.

To make the sauce:

Put the ketchup, mustard and brown sugar (starting with 1 cup) in a a small mixing bowl and mix together with a rubber spatula. When the mixture is smooth add the balsamic vinegar and mix again.  The sauce should be sweet and tangy when finished.

Pour the sauce over the meatloaf. You might have some left over but that’s ok it can store in the fridge to use as barbeque sauce.

You can cover the pan with foil or you can leave it off.

Bake the meatloaf for an hour or until cooked. To check if its done stick a knife  in the middle and if the meat is fully browned then the loaf is done.
