Perfect Gluten-Free Lemon Cupcakes with Lemon Frosting or Glaze

Lemon Cupcakes that are gluten free served with either lemon frosting or a lemon glaze are delicious and light.  

Perfect Gluten-Free Lemon Cupcakes with Lemon Frosting or Glaze

Frosting: Prep Time: 15 min Frosts: about 12 cupcakes

Glaze: Prep Time: 5 min Glazes: about 12 cupcakes

For the cupcakes:
3 cups super fine white rice flour
1 3/4 cups white sugar
2 1/2 tsp corn and gluten free baking powder
1/3 cup oil
1 cup butter replacement (I use Nuttelex Original)
1 cup milk (A2 protein, lactose free, rice milk etc)
1 tsp salt
2 tsp vanilla extract
2 tsp lemon extract
4 tbsp finely ground psyllium husk
5 tbsp lemon juice
5 eggs

For the frosting:
1/2 cup butter
3 tbsp super fine rice flour
3 tbsp lemon juice
2 1/2 cup corn free powdered sugar
10 drops yellow food coloring if desired

For the glaze:
1 cupcorn free powdered sugar
3 tbsp lemon juice
2 tsp super fine rice flour


For the cupcakes:

  1. Mix dry ingredients in a mixing bowl and mix until combined.
  2. Add butter replacement and oil and mix on low speed until mixture forms large clumps.
  3. Add eggs, one at a time mixing between each egg.
  4. Mix vanilla, milk, lemon extract, and lemon juice in a bowl or measuring cup. Slowly add the milk mixture to the batter, while mixing on low speed.
  5. Preheat oven to 350 degrees Fahrenheit or 175 degrees Celsius.
  6. Fill cupcake liners 3/4 full with cupcake batter and let sit for twenty minutes.
  7. Once the twenty minutes are up put in oven to cook for about 20 minutes or until toothpick inserted comes out clean.
  8. Let cool then frost or glaze the cupcakes.

For the frosting:

  1. Beat butter replacement on  high in a mixing bowl until it has a creamy white color to it.
  2. Add powdered sugar and flour, mix on low until combined, then beat on high until light and fluffy.
  3. Incorporate the  lemon juice into your frosting.
  4. Frost your cupcakes

For the glaze:

  1. Mix together powdered sugar and flour in a bowl.
  2. Add lemon juice, and stir until combined and no lumps are present.
  3. Glaze your cupcakes.

Notes: If you want a sweeter cupcake use the frosting, if you want a cupcake with less sweetness use the glaze.
